Snow Pea Salad
4 cups snow peas
2 large heads of romaine lettuce
2 large ripe avocados (peeled and diced)
2 cups tomato cherries (halved)
¼ cup alfalfa sprouts
6 sprigs of fresh basil, finely chopped
2 sprigs of fennel, finely chopped
Directions: Steam
snow peas for three minutes or until tender. Run under cold water for
30-40 seconds to prevent overcooking. Tear up the lettuce and place in
the bottom of a salad bowl. Mix in avocados, tomatos, sprouts, basil
and fennel. This will make a beautiful snow pea salad.
